Banana and Peanut Butter Muffins

You will need-

  • 200g self raising flour
  • 25g oats
  • 75g light brown muscovado sugar
  • 3 medium ripe bananas
  • 100g crunchy peanut butter
  • 2 medium eggs lightly beaten
  • 25g melted butter
  • 125ml semi skimmed milk

Firstly preheat your oven to 200C, gas mark 6. Then line a muffin tin with muffin cases, I used greaseproof paper cut into roughly 15cm squared and pushed them into each muffin hole.

Next, sift the flour into a large bowl and mix in the oats and sugar. In a separate bowl mash the bananas with a fork and then mix in the peanut butter, eggs, butter and milk. Once it is all mixed add it to the flour mixture and stir well till it is all incorporated together. Then just spoon the mixture into the muffin cases and bake for around 20 minutes or until the muffins are golden. (You could place a pecan nut on the top of each muffin before putting them in the oven)

When they are ready just pop them on a wire rack to cool, then enjoy!
